So I unexpectedly had the night off because yesterday my manager scheduled me for ACLS *advanced cardiac life support* certification tomorrow. (since I have to get certified soon for the Emergency room YAY!) So thankfully I was home when the UPS man brought me a box with these beauties inside
Brian also included Canon XSI for Dummies and a very helpful DVD on how to use the camera. I am definitely in the beginner beginner category but I am SO excited to practice and learn more about how the camera works so I can start to use it creatively.
I started playing around with different settings while my cats were walking around...and look what I did..

Today I woke up early and we were on the Road to the Outer Cape by early lunch. My Mom and Dad drove together in my mothers car and my brother and I drove up in my brothers/my old car. We are big believers in Toyota cars and everyone in my family owns one (except my husband, but we’ll convert him haha). When I was in college my parents bought a 1997 Toyota Corolla and I drove it all through college, it was my first car. It always got me from here to there with no problems. Now it has about 140,000 miles on it and my brother is having a good time improving it and tinkering with it. Now it has a huge subwoofer in the trunk and a new sound deck in the dashboard.
Anyway we made it up to Cape Cod around 2:00 and met up with my Grandparents and my Aunt and Uncle. We always stay at the Even'tide Motel which is a motel with cottages in Wellfleet, MA. My grandparents and my Aunt and Uncle had cottages and my parents and I stayed in a suite. It was nice and comfy. We went to Arnold's Clam Shack for dinner. It is a Cape Cod staple for FRESH fried seafood....delicious!

It's true internets! I baked! It was pretty wild. Of course, I started simple: strawberry cake mix, with strawberry frosting.
I did it! I made batter! Even though I didn't know the difference between blend and beat on my hand mixer.
So, this is where I need your help: I have NO idea how I'm supposed to get the batter into those tiny little cups without thousands of spills. I spilled so much batter, and poured so unevenly, that I only had enough for 22 cupcakes. I sorta got the hang of it by the end, but I still don't know how you guys manage it!
But look! Cupcakes! Lack of pouring skills aside, they still taste like cupcakes.
And this is where things went a little bit awry. I thought it would be cute to try the cut-plastic-bag trick and make little icing swirls, but I had accidentally bought whipped icing, so it came out looking like poop.
Little piles of smooth icing poop. Lesson learned: pipe thicker frosting, smooth thinner icing.
I finally got the hang of it (right at the end, of course) and sprinkled some red sugar on top.

Recipe:
Sprinkles Strawberry Cupcakes
Makes 1 dozen
1 ½ cup all-purpose flour, sifted
1 tsp baking powder
½ tsp baking soda
¼ tsp kosher salt
4 oz unsalted butter, at room temperature
1 cup granulated sugar
1 large egg, at room temperature
2 large egg whites, at room temperature
¼ cup whole milk, at room temperature
¼ cup pureed strawberries (use all-natural frozen that have been thawed)
1 tsp pure vanilla extract
Preheat oven to 350 degrees
Fill a 12 cup cupcake pan with cupcake liners
Whisk together flour, baking powder, baking soda and salt. Set aside
Add vanilla and strawberry puree to milk and set aside
In standing mixer, cream butter and sugar on medium-high speed until light and fluffy
Slowly add egg and egg whites and mix on medium speed until blended
With mixer on low speed, add half the flour mixture until just blended
Add milk mixture and mix just until blended
Add remaining flour mixture and mix just until blended. Scrape down bowl to make sure entire mixture is smooth.
Divide batter between 12 cupcake cups and bake for approx 22 minutes or until tops are just dry to the touch
Sprinkles Strawberry Frosting
Frosts 1 dozen
2 sticks (½ lb) unsalted butter, firm but not cold
1/8 tsp kosher salt
3 ½ cups confectioners sugar, sifted
½ tsp pure vanilla extract
2 tbsp pureed strawberries (use all-natural frozen that have been thawed)
Beat butter and salt on medium speed until light and fluffy
Reduce speed and gradually add confectioner's sugar and beat until incorporated
Add vanilla and strawberry puree and mix until blended. Do not overmix, or the frosting will incorporate too much air. The consistency should be dense and creamy, like ice-cream
