In honor of the Virginia Tech Hokies, I thought I'd share this picture from our wedding (credit to our outstanding photographers). Right after the bouqet and garter toss, our DJ announced that a special surprise visitor came to wish us congratulations. He put on the VT fight song and in came the Hokie bird- a huge thrill since 90% of our guests are MAJOR Tech fans. He stayed and did the Hokie Pokie with all our guests (I think just about everyone participated!) and then was available for pictures. The visit was arranged by my parents as a special surprise for me and my hubby (we both attended VT) so this was really a special surprise and helped to further personalize our reception.

Every star, planet, and quasar seen in the film is possible because of the world's most complete four-dimensional map of the universe, the Digital Universe Atlas that is maintained and updated by astrophysicists at the American Museum of Natural History. The new film, created by the Museum, is part of an exhibition, Visions of the Cosmos: From the Milky Ocean to an Evolving Universe, at the Rubin Museum of Art in Manhattan through May 2010.

WARNING: Better Homes and Gardens will tell you this takes about 45 minutes. They lie! They operate in a world where people know what they're doing; a world without procrastination.
Today, we made their Tex Mex Casserole, which is tasty, but surprisingly soupy.
First we let the onions sizzle in some olive oil until tender.
Then we added chicken-flavored rice and let that cook for 2 minutes, then stirred in an entire can of chicken broth and 2 cups of water. I brought that to a boil, then let it simmer for 20 minutes, at which point I realized we were going to be horribly, horribly late. Sean had to leave for work around 3:10 and at this point, it was 2:30 ish and I still had to bake the damn casserole. DISASTERS!
I cheated and used the pre-cooked Southwestern-flavored chicken strips. Sean chopped those strips up real nice and we added them to the rice mixture, along with tomatoes, diced green chiles (which smell SO good), cumin, chili pepper, basil and black pepper. I placed the mixture in a 2-quart casserole dish and baked for 25 minutes at 450. But something seemed...wrong.
That sure is a lot of liquid, isn't it? The directions told me that after all that boiling and simmering, the liquid wouldn't be completely absorbed, so I trusted them. But um...that looks VERY unabsorbed. Ultimately, I ended up ladling out much of the liquid just to get it closer to a casserole texture (rather than a weird stew).
And then I popped some cheese on top. It was supposed to sit for five minutes, but Sean had to leave RIGHT THEN, so we just dug in. It was a nice mix of tex-mex flavors (surprise, surprise) and I found that the consistency almost mirrored a dip, so I broke out some tortilla chips and scooped mine. Very good; I recommend it!

Title: Smackdown! - 7.2.10 - Michelle McCool v. Kelly Kelly
CREDITED TO WWE/MichelleMcCool.net
-=-=-=-=-=-=-=-=-=-=-=-=-=-
After nearly a month of not wrestling on WWE television, the First Lady of SmackDown made her in ring return tonight! Her opponent? None other than Smelly Kelly, accompanied by "Tonight's Two Minute Match is Brought to You By the Letter T" Tiffany! Tiffany didn't get to show off her letter making skills. I know, so sad. I don't know how we'll ever continue our lives without a weekly dose of Tiffany's impression of alphabet soup. Oh, wait! All worries and stresses are gone once Michelle's music hit the speakers! Thank you, Michelle and Layla!
The duo head to the ring and Layla has a can of what looks like air freshener or deodorant with her. Febreze, anyone? It looked like Michelle was heading into the ring for her match, but instead went charging for Tiffany. Not gonna lie, it's pretty hilarious that Tiffany got her butt kicked about as much as Kelly did and she wasn't even in the match! Maybe she should stay in the back so she doesn't get hurt. In that skirt. Or her ripped up, Ellie Mae Clampett shirt! Maybe the rip happened when Michelle literally threw the girl into the barricade. Too bad Kelly had to ruin our fun because surely we would have seen Michelle drive her knee into Tiffany's blonde noggin. There's always next week!
The bell finally rings, but the smell is too atrocious! Michelle rolls back out of the ring while Layla tries to neutralize some of the stench. Meanwhile in the ring, Kelly looks twelve kinds of ticked off. Easy there, Smelly Kelly. Michelle eventually returns to the match and puts a beating on Kelly. Ahhh, much better! It's been far too long since we've seen Michelle dish out a nice serving of McCruel Casserole. We hear it's even better if you sprinkle the tears of her victims on it!
Anyway, Tiffany sneaks up on Layla and clotheslines her. She takes the can and it's like "I'm a Celebrity Get Me Out of Here!" all over again! Michelle turns into Heidi Montag and goes absolutely bonkers. Okay maybe she was more upset that Tiffany dare mess with her bestie Layla, but ya gotta admit, that hissy fit was pretty funny. Don't mess with a woman's toiletries! While Michelle kicks Tiffany to the ground, Kelly comes up behind her and gets the win with a roll up. PFFFFFFFFFT! She knew it was a fluke because she quickly rolled out of the ring, retreating up the ramp with her pal. Michelle and Layla scream at them from the ring. Michelle had her shoulder up! So not fair and this is so not over! Todd Grisham makes a big deal out of it. He says LayCool are no longer famous are flawless. Ummm.. who are you again?? Hush your face. He says Kelly is definitely in the title picture. Says who?! Nobody announced this a number one contender's match. Kelly doesn't have a rematch clause to invoke. Again, hush your face. LayCool are and forever will be Beautiful, Famous and Flawless! Now that is REAL TALK!
As usual we find ourselves asking, now what? It seems like now that Beth is gone, so are the ten minute segments and matches. How long til Melina can return? Poor Jillian can only wrestle the Twins for so long, send her over! We need something! Tiffany can do all the posing and flexing she wants, it doesn't make her a viable threat. Sorry, honey, but nobody's scared of you. And Kelly? Well we're starting to feel sorry for her. Oh, there is Rosa, but I'm not sure how jumping jacks backstage or jumping rope in the ring is going to get you anywhere. Maybe Serena will start wrestling now that she's given in to the temptation of alcohol, and hopefully she'll grow her hair out too. Oooh, LayCool can give her a make over! A wig worked for Molly Holly, and with LayCool helping her out, she'll be Flawless in no time!
Many of you probably already know that Vané of Brooklyn Bride has been making some custom ring pillows after people went crazy over the one she made for her own wedding, so I thought I'd let you know that she just launched an online shop. Be sure to stop by and check them out!
Many of the fabrics she uses are available only to the trade, as well as fun fabric remnants from all kinds of sources. Beautiful stuff, Vané!
This picture is from the National Stationary Show, but I thought it served as good inspiration for decor. Letters are abundant right now; you can buy them in wood, metal, cardboard, etc. at Urban Outfitters and Michaels. But a row of them, hung with ribbons, seems a little more creative, if maybe a little girly. I'd love to try this with our initials somewhere at the wedding, too.
As some or most of you know, I am by trade a journalist and so my curiosity never dies. That said, I wanted to introduce my interview series with other people about their experiences in that most noble endeavor: cooking.
Today's interview is with Amanda of Is This Thing On?. I met Amanda in college; she has now just completed her master's degree in English from the University of Maine and moved back to the Bad News, so hopefully she'll be coming to teach me how to bake. She specializes in cupcakes and I would like to announce that she has graciously agreed to make my wedding cupcakes! Anyway, the interview is pretty long, so I am splitting it into two parts.
Amanda's Hokie Hi-Hat cupcakes: meringue dipped in candy melts to create "the DQ effect."
Newly Domesticated: Why does baking appeal to you?
Amanda:I love baking because it allows me to check out of my busy, complicated grad school life and focus on manageable steps that I know (or hope) I can handle. Baking and blogging about it makes me feel good at something. Cupcakes are the perfect baked good because I can be creative with flavors and decorations without a huge amount of risk; since Im still following basic recipes, Im not as on-my-own as I am when cooking.
ND: What are your earliest memories of cooking?
A:Cooking was always my sisters thing. She had the Easy Bake Oven and the dreams of culinary school, and I didnt really want to be involved in the kitchen. I remember one particular time in middle school when my aunt was trying to teach me how to make a pie. I was adamant about not being a pie making person, and I think again I just shoved my sister in the direction of the kitchen and got away with it. I used to think I just wasnt a good cook, but I realized that wasnt really true in college when I started cooking for myself.
ND: Are you self-taught or were you educated?
A:I was all ready to say self-taught, but I think its more accurate to say that Im blog-educated. My mom taught me some of the basics about cake and icing, but since I didnt really start baking until I lived alone, Ive learned the most from food bloggers. I have a tab on my iGoogle homepage for cupcakes and one for cooking, and I check them about half a dozen times a day. Its a little bit out of control, but I just cant get enough! Some of my favorites are How to Eat a Cupcake, Pioneer Woman and Cupcake Project.
Outside of my foodie blogs, I have quite a growing collection of cookbooks. Over the past year, Ive started reading them like novels. Old cookbooks are the best. Even if I dont make any of the recipes, I really enjoy reading the ingredients and instructions. I laughed at myself the other night when I realized I was reading a cookbook in bed before going to sleep. So, even though Ive not taken a course on baking or cooking, I guess Ive been getting an education from a number of sources.
Amanda's Maple Bacon, Fauxtress and Blueberry Ricotta cupcakes. Amazing, no?
ND: What do you like best about cupcakes?
A:I love the size and portability of cupcakes. Since I take most of my baking projects to other people, they have to be easily moved, stored, and eaten. I used to just drop them off in the English Dept. with a post-it note advertising their flavor(s), and that would be impossible with a messy cake that had to be cut and plated and blah, blah, blah.
Cupcakes are also really forgiving. In each batch, I have between 12 and 30-some chances to make a really cute cupcake. I can make 15 really awkwardly decorated cupcakes, photograph the 3 successful cupcakes and no one has to know that I practiced on most of them.
And lets be honest, things are just cuter when theyre small.
And people are less likely to refuse a cupcake because they are being good. It still happens, but not nearly as often as when I bring other sweets. Okay Ill stop listing the cupcake pros now.
