Tex Mess Casserole

Tex Mess CasseroleWARNING: Better Homes and Gardens will tell you this takes about 45 minutes. They lie! They operate in a world where people know what they're doing; a world without procrastination. 

Today, we made their Tex Mex Casserole, which is tasty, but surprisingly soupy. 

First we let the onions sizzle in some olive oil until tender.

Tex Mess CasseroleThen we added chicken-flavored rice and let that cook for 2 minutes, then stirred in an entire can of chicken broth and 2 cups of water. I brought that to a boil, then let it simmer for 20 minutes, at which point I realized we were going to be horribly, horribly late. Sean had to leave for work around 3:10 and at this point, it was 2:30 ish and I still had to bake the damn casserole. DISASTERS!

Tex Mess CasseroleI cheated and used the pre-cooked Southwestern-flavored chicken strips. Sean chopped those strips up real nice and we added them to the rice mixture, along with tomatoes, diced green chiles (which smell SO good), cumin, chili pepper, basil and black pepper. I placed the mixture in a 2-quart casserole dish and baked for 25 minutes at 450. But something seemed...wrong.

Tex Mess CasseroleThat sure is a lot of liquid, isn't it? The directions told me that after all that boiling and simmering, the liquid wouldn't be completely absorbed, so I trusted them. But um...that looks VERY unabsorbed. Ultimately, I ended up ladling out much of the liquid just to get it closer to a casserole texture (rather than a weird stew).

Tex Mess CasseroleAnd then I popped some cheese on top. It was supposed to sit for five minutes, but Sean had to leave RIGHT THEN, so we just dug in. It was a nice mix of tex-mex flavors (surprise, surprise) and I found that the consistency almost mirrored a dip, so I broke out some tortilla chips and scooped mine. Very good; I recommend it!

After nearly a month of not wrestling on WWE television, the First Lady of SmackDown made her in ring return tonight! Her opponent? None other than Smelly Kelly, accompanied by "Tonight's Two Minute Match is Brought to You By the Letter T" Tiffany! Tiffany didn't get to show off her letter making skills. I know, so sad. I don't know how we'll ever continue our lives without a weekly dose of Tiffany's impression of alphabet soup. Oh, wait! All worries and stresses are gone once Michelle's music hit the speakers! Thank you, Michelle and Layla!

The duo head to the ring and Layla has a can of what looks like air freshener or deodorant with her. Febreze, anyone? It looked like Michelle was heading into the ring for her match, but instead went charging for Tiffany. Not gonna lie, it's pretty hilarious that Tiffany got her butt kicked about as much as Kelly did and she wasn't even in the match! Maybe she should stay in the back so she doesn't get hurt. In that skirt. Or her ripped up, Ellie Mae Clampett shirt! Maybe the rip happened when Michelle literally threw the girl into the barricade. Too bad Kelly had to ruin our fun because surely we would have seen Michelle drive her knee into Tiffany's blonde noggin. There's always next week!

The bell finally rings, but the smell is too atrocious! Michelle rolls back out of the ring while Layla tries to neutralize some of the stench. Meanwhile in the ring, Kelly looks twelve kinds of ticked off. Easy there, Smelly Kelly. Michelle eventually returns to the match and puts a beating on Kelly. Ahhh, much better! It's been far too long since we've seen Michelle dish out a nice serving of McCruel Casserole. We hear it's even better if you sprinkle the tears of her victims on it!

Anyway, Tiffany sneaks up on Layla and clotheslines her. She takes the can and it's like "I'm a Celebrity Get Me Out of Here!" all over again! Michelle turns into Heidi Montag and goes absolutely bonkers. Okay maybe she was more upset that Tiffany dare mess with her bestie Layla, but ya gotta admit, that hissy fit was pretty funny. Don't mess with a woman's toiletries! While Michelle kicks Tiffany to the ground, Kelly comes up behind her and gets the win with a roll up. PFFFFFFFFFT! She knew it was a fluke because she quickly rolled out of the ring, retreating up the ramp with her pal. Michelle and Layla scream at them from the ring. Michelle had her shoulder up! So not fair and this is so not over! Todd Grisham makes a big deal out of it. He says LayCool are no longer famous are flawless. Ummm.. who are you again?? Hush your face. He says Kelly is definitely in the title picture. Says who?! Nobody announced this a number one contender's match. Kelly doesn't have a rematch clause to invoke. Again, hush your face. LayCool are and forever will be Beautiful, Famous and Flawless! Now that is REAL TALK!

As usual we find ourselves asking, now what? It seems like now that Beth is gone, so are the ten minute segments and matches. How long til Melina can return? Poor Jillian can only wrestle the Twins for so long, send her over! We need something! Tiffany can do all the posing and flexing she wants, it doesn't make her a viable threat. Sorry, honey, but nobody's scared of you. And Kelly? Well we're starting to feel sorry for her. Oh, there is Rosa, but I'm not sure how jumping jacks backstage or jumping rope in the ring is going to get you anywhere. Maybe Serena will start wrestling now that she's given in to the temptation of alcohol, and hopefully she'll grow her hair out too. Oooh, LayCool can give her a make over! A wig worked for Molly Holly, and with LayCool helping her out, she'll be Flawless in no time!

Cooking with the backseat chef

On the menu today: Jerk Pork Chops with instant rice, another recipe from Better Homes and Gardens' "Anyone Can Cook."

If I do say so myself, this was the best thing I've made so far. Sure, the pork was overcooked. Sure, I didn't really make the effort I should have to cut off the fat BEFORE cooking, or to scrape the "drippings" into the pan. Sure, I may have used every kitchen tool I have in the process. But I think it came out really well and I think Sean liked it.

This, despite the fact he is a backseat chef. I don't know if you all have encountered this before. By "this," I mean someone who has less experience cooking and is an infinitely pickier eater and yet insists you are doing whatever you're doing wrong. Now, I love Sean, and in many cases, he's right: I am doing it wrong. But today that was not the case.

After I finished cooking the pork, the directions called for stirring dijon mustard into the skillet drippings, then whisking in marmalade and orange juice. No sooner had I dropped a dollop of dijon in the center of the skillet than Sean said, "Um...I don't think you were supposed to do that in the same skillet."

I, being a defensive Latina, was like, "Yuh huh! What do you know?" And then he tried to convince me that, despite the fact the instructions didn't mention it, I was supposed to transfer all the ingredients to a sauce pan. Needless to say, I ignored him and the sauce came out perfect, as evidenced below. Sean, I'm sorry to rat you out to the Internets.


Cooking with the backseat chef

I'd like to take a moment to sing the praises of Uncle Ben's Instant Rice. It cooks perfectly and the only step is "Open bag. Microwave bag. Remove rice." It was ridiculously easy. My Backseat Chef, however, made sure to tell me that I shouldn't have bought the butter-flavored rice, so next time, we'll be cooking the plain white.

A heads up...

We've already mentioned this previously, but we will be closed April 30th-May 10th for travel. The next few days are going to be quite hectic as we prepare for departure so we wanted to provide a heads up! We will have very limited internet access (if any) while overseas so we politely ask current & future clients to refrain from e-mailing us while we're away as we will not be able to respond to inquiries during this time. Instead, we have provided some basic information about how our close time will effect you:

For new orders: Please feel free to place orders while we are away with the understanding that invoices will be sent upon our return. We are accepting orders for July 25th weddings and beyond with no additional rush fees. For weddings prior to July 25th, please contact us upon our return and we'll check our availability at that time. Unfortunately we cannot accept any more rush orders for May or June weddings.

For orders scheduled to ship during our close time: not to worry, we have planned ahead and all orders originally scheduled to ship during this time (according to your original paypal invoice) will ship prior to our departure! This close time will not lengthen any turnaround times for orders scheduled to ship after our return. We've got you covered! We've also shipped out all orders for weddings up to May 16th. If you placed an order for the weekend of May 23rd your order will ship out as soon as we return and we'll be sending it via priority mail 2-3 day shipping... so again, no worries!

For monogram & logo orders: We have had our close notice on the main monogram page of our website since April 1st as unfortunately monogram & logo turnaround times will be effected as these dates (April 30th- May10th) are non-business days. We also provided additional notice on all paypal invoices for monogram/logo orders to alert you of this additional lead time prior to making your payment. Monogram & logo orders placed after April 2nd will be effected but we will work as fast as possible upon our return to get these out to you quickly!

For readers of our blog: We're not leaving you hangin'! We have some great scheduled posts planned full of yummy eye candy... AND if possible, we'll be popping in to say hello and share our adventures!

And not only are the details beautiful, and the venue, but these photos really capture how much fun this wedding was - I think once you see them, you'll wish you'd been there (I know I do!).

Kristin carried a bouquet of white lisianthus, freesia, sweet peas, and orchids, all tied with an organic hemp rope. The bridesmaids' bouquets were yellow and white freesia, all made by Floral Elements.

Before the ceremony, guests were asked to write well-wishes for the couple. The ushers collected these notes, and instead of flower girls and ring bearers, there were wish bearers: Kristin and Mark's five nieces and nephews carried the notes down the aisle.

Kristin's friend Hayley and Hayley's dad, Fred Penner, performed Blackbird as the wish bearers walked down the aisle, and Here Comes the Sun as Kristin walked down the aisle.

Each of the bridesmaids each chose a dress in gray, a great way for them to each feel comfortable and show their personalities.

Kristin's father officiated the ceremony, which took place at the Knox United Church in Winnipeg. To make sure their vows were especially meaningful, Kristin and Mark spent a weekend with her father working on them. It was also important to them that all of their guests - religious or not - could feel comfortable and at ease, so they included non-religious elements in the ceremony, including a reading from Winnie the Pooh called Us Two.

Kristin and Mark rented a photobooth for guests to enjoy, and also to include in the guest book. They also hired babysitters and set up a kids area - it was important that their wedding was kid-friendly, but also that parents could enjoy the party.

The wedding was catered by Dandelion Eatery, where Kristin used to work, and which uses local and organic ingredients. Dessert included a build-your-own-sundae bar and a variety of cakes and tortes.

The cakes, by Chocolate Zen, included an assortment of cheesecakes and tortes - Oreo, hazelnut espresso, lemon raspberry mousse, strawberry and cream, lemon meringue...

Bluegrass band Oh My Darlin' kicked off the music to get the 120 guests on the dance floor, and were followed by DJ Travis Campbell, 204-694-9803. A basket of flip-flops encouraged guests to switch into dancing shoes.
